Break the egg into the Small Mixing Bowl and Whisk until well beaten.
Add the beaten egg, diced tomatoes, almond flour, and ¾ cup of the mozzarella to the contents in the medium mixing bowl. Then, add salt and pepper as desired.
After mixing the contents well, spoon them into each of your zucchini boats, and microwave them for 3 minutes. When the 3 minutes are over, sprinkle the remaining shredded mozzarella over the top of each zucchini and microwave for 30 seconds to 1 more minute, or until the cheese is melted.
